Maximino Palacios and his wife Marlene are perfectionists when it comes to coffee quality at their farm, Santa Adela. Through a strong partnership with Gold Mountain Coffee Growers, they're able to continue innovating with experimental processes like this carbonic maceration microlot.
Cherries for this lot are picked all morning and then journey two to three hours through the mountains to Finca Idealista, where they are double-fermented in an anaerobic environment as whole cherries.
Staff take Brix refractometer and pH readings many times each day so that the level of fermentation and pH allow clean fruit notes to abound in the final cup.
Strawberry, white grape, and jasmine
Maragogype is a relatively tall but low yielding variety that produces extremely large coffee beans. They have equally extreme flavor potential. A natural mutation of Typica discovered near Maragogipe, Bahia in Brazil, Maragogype is also a parent of the Pacamara and Maracaturra varieties.
This nanolot is the product of the ripest handpicked Maragogype cherries from a small and select subset of Gold Mountain Coffee Growers member farms. The low yield and high quality result in a one-of-a-kind lot reminiscent of the esteemed Panamanian geisha naturals - lightly fruity, floral, and tea-like.
Juicy tangerine, macadamia, and caramel
This exceptional coffee is the result of a journey that began over a decade ago when Olger and his wife, Magda Zabala, ventured into coffee cultivation. Their farm, spanning 10 acres with 9,000 coffee trees, is a family endeavor where each member plays a crucial role, from nurturing the plants to roasting and packaging the coffee. The farm employs 2-3 full time workers and depends on a harvest staff of 60 additional workers.
A partnership with award-winning producer Juan Peña's coffee exporting venture, CafExporto, has helped bring Olger Rogel's exceptional coffees into the spotlight, and to bring these high-scoring microlots to roasters like us.
Blackberry, pomegranate, and mulled wine
This stunning coffee comes from Luz Merino's small, woman-owned farm in Zamora Chinchipe, Ecuador. At 1543 meters above sea level, Luz, with a rich family history in coffee production, expertly manages her 5-acre estate alongside a dedicated team. The Pacamara beans, known for their size and unique flavor, are naturally processed and sun-dried on raised beds, ensuring a superior quality in every cup.
A light-medium roast accentuates the natural flavors of cinnamon, blackberry, and pomegranate, making it perfect for pourover brewing.
